This Gluten Free Banana Bread Recipe is easy to make a crowd favorite

Years ago, when my kids were little and I was trying to figure out what to do with my life, I started a gluten-free baking business. The inspiration came after searching to find delicious gluten free baked goods. Now, of course, gluten free cookies, muffins and breads are found in bakeries and grocery stores all over Los Angeles, but back then it was a challenge. I had two popular items – gluten free banana bread and a chocolate chip cookie.

I’m sharing the banana bread recipe because I’ve shared variations of it online before and because I’m going to make a lot of it over the next couple of weeks as a holiday gifts. (I’ve never shared the chocolate chip cookie recipe because in the back of my mind I want to someday sell the cookies in stores.) The sweet bread is very easy to make and can be frozen if you want to make it now to give out later.

This recipe has coconut oil, but you can substitute canola oil, which is how I usually make it. You can also make it as one big loaf, muffins or as small bundt cakes like I did here.

Preheat the oven to 350 degrees. Line a baking sheet with paper bundt pans or spray a pan with coconut or canola oil.

Ingredients for easy gluten free banana bread

Combine 2 cups gluten free flour (I like Trader Joe’s Gluten Free Baking Mix), 2 teaspoons baking powder, 1 teaspoon baking soda, 1 1/2 teaspoons xantham gum, 1/2 teaspoon salt and 1/2 teaspoon cinnamon in a large bowl and set aside.

Mash four ripe medium bananas (there are three in the picture, but I used four). Add 2 beaten eggs, 1 cup of sugar, 1/2 cup of melted coconut oil (or canola oil) and 1 teaspoon vanilla. Whisk together until fully combined.

Pour the batter (I used an ice cream scooper) into the prepared pan or paper bundts.

Cook for 25 minutes (40 for a bread pan) or until a toothpick comes out clean and the top is golden brown.

Serve warm for a delicious treat or cool completely to wrap for gifts or freeze to save for later.

The Best Gluten Free Banana Bread Recipe

Ingredients:

2 cups gluten free flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons xantham gum
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
2 beaten eggs
1 ½ – 2 cups mashed bananas (4 medium bananas)
1 cup sugar
½ cup coconut oil, melted
1 teaspoon vanilla

Directions:

Preheat the oven to 350 degrees. Line a baking sheet with paper bundt pans or spray a pan with coconut or canola oil.

Combine the gluten free flour, baking powder, baking soda, xantham gum, salt and cinnamon in a large bowl and set aside. Mash 4 bananas in a medium bowl. Whisk together bananas, eggs, sugar, oil and vanilla.

Add the banana mixture to the flour and stir until combined. Fill bundt pans 3/4 full. Cook for about 25 minutes or until a toothpick comes out clean and the top is golden brown. (If using one bread pan, cook for about 45 minutes.) Delicious served warm or cool completely to freeze or wrap as a gift. Enjoy!
