Blueberry Pie Parfait Recipe with Dreyer’s Vanilla Ice Cream

When I started thinking about what to make, I was hoping to come up with a wholesome, ice-cream-for-dinner recipe. It was that and so much more. When I took a mouthful of this creation, it tasted like decadent blueberry pie and ice cream.
Dreyer’s Slow Churned Ice Cream has half the fat and 1/3 fewer calories than regular ice cream. It’s rich and creamy with a delicious vanilla flavor. It was the perfect compliment to the granola and blueberries. To make the parfait, I used an organic granola with hearty oats that ended up tasting like a crunchy, oat pie crust. The blueberry sauce was simple to make with only a few ingredients. The directions are below.
1 cup blueberries
2 tablespoons sugar
1 teaspoon cornstarch
Lemon juice to taste
Combine blueberries, cornstarch, sugar, and lemon into a small sauce pan. (I used half of a small lemon, but I like the sauce to be very tart.) Cook over medium heat until the mixture starts to thicken.
To make the parfaits, layer the bottom with granola. Follow with about a half scoop of ice cream, then the blueberry sauce. Add another layer of granola, ice cream, and blueberry sauce. I was heavy on the blueberry sauce so this made two parfaits.
My boys and I loved them. It’s a very special occasion when we have ice cream for dinner, and I think the next time we do, we’ll having a parfait with Dreyer’s Vanilla, granola, and another delicious pie filling. It’s much easier than baking a pie or cobbler for dinner guests as well. And, placed in a the right serving dish, just as impressive.
