We’re doing work on our house that has gone over schedule and we have been staying in an apartment, plus my kids go back to school this week. I haven’t had much time to get to the store or cook so our meals are from a plastic container or heated in the microwave. That’s why I was so excited to open this box:

HelloFresh sent enough food for three meals. And three really interesting meals. When you order from HelloFresh you are able to choose your dinner and then a box arrives on your doorstep with the ingredients and a beautiful recipe booklet. I chose Rosemary Beef Skewers, Smoky Chicken Tacos and Jamie’s Grilled Chicken.

I made Smoky Chicken Tacos first. The kit came with a package of Murray’s Chicken, fresh vegetables, a seasoning pack and flour tortillas. The recipe was easy to follow, and as you can see from the photos below, the produce was fresh. First I prepared the vegetables.


Then I followed the step by step directions to cook the meal. I liked that this recipe allowed for cooking everything in one pan.

When I assembled the tacos I used the flour tortillas for my boys and corn tortillas for me and my husband to make them gluten-free.

I loved the ease and flavor of this recipe. The tacos were topped with a homemade salsa and lime cream sauce. The salsa and cream sauce were simple to make yet added so much to the recipe.

The Rosemary Beef Skewers were also very simple. The vegetables were broiled in the oven, put aside and after a quick marinade of fresh garlic, rosemary and olive oil, I broiled the beef on skewers. There was something left in my oven that started smoking and it set off the fire alarm. It was loud and chaotic, but once we calmed down the kids and our dog, I was able to finish cooking and we still had a lovely dinner. My younger son (my picky eater) enjoyed the Rosemary Beef Skewers (as did we all), and asked if I could make it again.

My favorite meal was Jamie’s Grilled Chicken. “Jamie” is Celebrity Chef Jamie Oliver. His recipe intimidated me at first (I had to make dinner quickly before I picked up kids), but it was really easy. I wasn’t looking forward to roasting red peppers but it took a few minutes on the gas stove and they turned out delicious. At the same time, I was cooking rice and chopping parsley and green onions. I then mixed the green onion and parsley with the rice plus a little olive oil. The best part was that the recipe called for toasted pistachios. It said to cook them in a pan until they “smell fantastic.” I cooked the chicken in a few minutes and had this delightful dish topped with feta cheese.

Every week, the chefs at HelloFresh create new recipes. What I liked about our week’s worth of meals were the simple ways to make meals more interesting. Rubbing garlic and rosemary on beef isn’t groundbreaking and neither is mixing parsley and green onion in rice, but I never would have thought to do either of those things. They weren’t just delicious healthy meals, but they gave me so many ideas.

I would definitely order HelloFresh again. A Classic Box with three meals for 4 people is $129. That seems reasonable to me. Especially since my kids liked it and it was quick and healthy.

    My favorite meal to feed my little ones is poke bowls filled with pork or fish, shiratake noodles, nori, Japanese mushrooms, shredded romaine, carrots, jicama, macadamia nuts, coconut flakes and sesame seeds…and shaved ice with cut fruit for a summer dessert!

    I love when we have grilled salmon and veggies and herbs, always makes for a great healthy meal in my family and the kids love it so its a win win for this mom.

    My son loves burrito bowls. It’s an easy way to not get a headache since he’s at the picky age and it gives him the chance to add whatever toppings he’d like on his seasoned rice.
